We’ve all been there. You got distracted by your phone, the soup boiled, and now it looks like cottage cheese swimming in oil. Don’t panic. You can save it.
First, blend it. A quick whirl with an immersion blender can often re-emulsify the soup. If that doesn’t work, add a tablespoon of cold butter or a splash of cold milk and whisk vigorously.
No blender? Strain it. Pour the soup through a fine-mesh sieve to remove the curds, then return the smooth liquid to the pot and stir in a fresh splash of cream. Crisis averted, and you’ve got a story to tell.
