Lay your turkey breast-side up on a clean cutting board. Give it a little pat—acknowledge its existence. Now, look at the big cavity opening (the one where the legs point up). You’ll see a flap of skin or a small opening near the tail end. That’s where the neck is hiding, often snuggled against the breastbone. If you’re feeling brave, stick your hand in there—gently!—and feel for a long, firm tube of meat and bone. That’s your target.
Sometimes it’s tucked so deep you might think it’s playing hide-and-seek. Don’t worry, it’s just being shy. You can also check the neck cavity (the opposite end, where the neck skin flaps out) if you’re really stuck. Fun fact: some turkeys come with the neck already removed, but those are the unicorns of the poultry world.
