Never, ever store beets next to apples or pears. Those fruits release ethylene gas, which makes beets think it’s spring and they should sprout. You don’t want a beard of roots on your beet. We call that a “sad science experiment.”
And please, no foil. I wrapped a beet in foil once because I was out of bags. It turned into a sweaty, slimy alien. I threw it away and apologized to my trash can.
