Sometimes you’ll see little “eyes” or hairy roots sprouting from your ginger. Don’t panic. Just cut them off. They’re not poisonous, but they are woody and taste like dirt. We’re not eating dirt today.
Chop those bits off and toss them in your compost bin. Or just throw them out the window for the squirrels—they probably have better things to do, but it’s the thought that counts.
